Gravel or MTB? Which is best (and fastest) for you?

Which is the best bike for your fast off road riding? Race Gravel, Adventure Gravel or XC MTB? I tested Merida's Mission, Silex and Big Nine bikes back to back on a timed lap to find out and the science shocked me. But is riding all about speed, or more about the experience?
