A Baking Mad special featuring Donal Skehan! A Pumpkin and Pecan Chocolate Cake!
Donal and I are cooking up something seriously delicious today - a Pumpkin and Pecan Chocolate Cake! YUM! Ingredients: 225gr dark chocolate 150gr unsalted butter 3 eggs 275gr dark muscovado sugar 275ml water 3tsp vanilla extract 250gr self raising flour 100gr grated pumpkin 125gr roasted cinnamon pecan Method: Preheat the oven to 170 degrees Celcius. Grease & line a springform tin. Melt the chocolate and butter together. Beat the eggs and sugar together until nice and smooth, then beat in the chocolate mixture. Beat in the water, vanilla; sift in the flour; mix till smooth. Fold in the pumpkin and pecan. Turn into the prepared tin and bake for 50/60min till the knife comes out clean. Leave to cool in the tin for 10mins before turning on a cooling rack.
