Its roots and leaves contain compounds called saponins, naturally occurring glycosides that function as surfactants. Each saponin molecule has a hydrophilic end that attracts water and a lipophilic end that attracts oils and grease. When agitated in water, these molecules reduce surface tension and trap fats inside foam bubbles. This is the same mechanism behind every synthetic detergent on the market. The roots contain between twenty and thirty five percent saponins by dry weight. Peer reviewed research has confirmed antimicrobial properties of saponin compounds, and dermatological literature has documented skin irritation caused by the petroleum derived surfactants that replaced plant based alternatives in the mid twentieth century.
