In today's vlog, I’m welcoming my neighbours for a cozy chai gathering at home, keeping our Pakistani traditions of hospitality alive in Canada. Enjoy homemade chai, eggless cake, sugar-free oat cookies, chicken bread, and a little taste of home. ☕❤️ Welcome to Cooked by Sabeen — where food, traditions, and simple joys come together. love, --Sabeen💕 Big Batch Date, Maple & Chocolate Chip Cookies Makes: 36–40 cookies Ingredients 2 cups all-purpose flour 2 cups rolled oats 2 eggs ½ cup neutral oil ½ cup maple syrup 1 cup finely chopped dates ½–¾ cup chocolate chips 2 tsp baking powder (or 1 tsp baking soda) ½ tsp salt Optional: 1 tsp vanilla and 1 tsp cinnamon The dough should be thick and scoopable, not runny. Instructions 1. Preheat oven to 350°F (175°C). 2. Whisk together the eggs, oil, maple syrup, and vanilla. 3. In another bowl, mix the flour, oats, baking powder, salt, and cinnamon. 4. Stir the dry ingredients into the wet ingredients until just combined. 5. Fold in the dates and chocolate chips. 6. Scoop about 2 tablespoons of dough onto a lined baking sheet, leaving about 2 inches between cookies. 7. Bake for 10–12 minutes, until the edges are lightly golden. 8. Cool on the baking sheet for 5 minutes before transferring to a rack. Maple syrup can be replaced with an equal amount of honey, agave, or date syrup. If using brown, white, or coconut sugar instead, add 1–2 tablespoons of milk or water to keep the cookies moist. 🌼 Vanilla Cardamom Suji Yogurt Cake (Small 6-inch Cake) Ingredients 1 cup (160 g) fine suji/semolina 1 cup (240 g) plain yogurt, room temperature ½ cup (100 g) sugar ¼ cup (60 ml) oil or melted butter ¼ cup (60 ml) milk (add 1–2 tbsp more if needed) 1 tsp vanilla extract ½ tsp cardamom powder 1 tsp baking powder ½ tsp baking soda Pinch of salt Optional topping 2 tbsp chopped pistachios or cashews Dried rose petals Light sugar syrup for brushing Method Mix suji and yogurt together. Rest for 30 minutes. Add sugar, oil/butter, milk, vanilla, cardamom, and salt. Mix well. Add baking powder and baking soda. Stir gently. Pour into a greased and lined 6-inch cake tin. Bake at 180°C (350°F) for 30–35 minutes until golden and a toothpick comes out clean. Cool for 10 minutes. Brush lightly with sugar syrup if desired and decorate.
