Golden Garlic Chicken Fried Rice

How to make Golden Garlic Chicken Fried Rice at home. Tender chicken, fluffy rice, and plenty of garlic come together for a simple and delicious meal. Better than takeout and easy to make. Ingredients • 280g boneless chicken thighs • 300g cooked and cooled rice (day-old rice works best) • 40g green onions • 1/4 red bell pepper • 2 cloves garlic • 2 eggs, beaten with a pinch of salt For the Chicken Marinade • 1 tsp soy sauce • 1/8 tsp salt • 1/4 tsp black pepper • 2 tsp cornstarch Mix well and marinate the chicken for about 10 minutes. Instructions 1. Heat a little oil in a pan over medium heat. Add the eggs and cook until just set. Remove and set aside. 2. Add the chicken and cook until golden brown on both sides. 3. Add the garlic and stir-fry until fragrant. 4. Return the eggs to the pan. Add the rice and break up any clumps. 5. Season with 1/8 tsp salt, freshly ground black pepper to taste, and 1 tsp soy sauce. Stir-fry until evenly combined. 6. Add the diced red bell pepper and toss to combine. 7.
