INGREDIENTS 1 red pepper 3 plum tomatoes 4 garlic cloves 1 kg potatoes 8 split anchovies 1 tablespoon sweet paprika Cumin Mint Oil Salt PREPARATION ✅ Roast the peppers and tomatoes in a pan for 30 minutes. Then, clean and cut them. ✅ Peel and slice the potatoes. Then, cook them for 15 minutes, add the roasted peppers, and turn off the heat so they cook with the remaining heat. ✅ Prepare our majao, which will consist of the garlic cloves, salt, sweet paprika, and roasted tomatoes. Boil our potatoes and add the majao along with a splash of oil. Let it cook for 7 minutes. ✅ Now add the mint and anchovies. Turn off the heat and let it sit for 10 minutes, enough time for the anchovies to cook with the remaining heat from the pot.
