Organic zucchini, finely grated 1 tsp. salt 1 large egg or 2 small ¼ cup gluten free flour, I used Bob's Red Mill 1 to 1 ¼ cup blanched almond flour ½ tsp. Garlic powder 8 - 10 fresh basil leaves, rolled and chopped 3 organic green onions, sliced ⅓ cup freshly grated parmesan cheese ½ tsp. Ground pepper Olive oil Directions: Place the grated zucchini in a strainer, add the salt and mix it in. Place the strainer into a medium size bowl to catch the liquid as it drains out. Let this sit between 10 and 20 minutes. The salt will draw out the water from the zucchini. Place the green onion, almond flour, white flour, garlic powder, egg, parmesan cheese, chopped basil, and pepper into a large bowl and stir to combine. Press and squeeze the zucchini to extract as much water as possible. Once dry, pull the zucchini apart and spread it around in the bowl with the other ingredients. Stir until fully incorporated. This took me about 3 - 4 minutes to accomplish. Preheat a large frying pan over medium heat. Add about 1 to 2 tsps. of oil. Swirl the pan until it is hot. Then add somewhere between ¼ - ⅓ cup of zucchini batter. Form it in your hand like a hamburger patty. The key is to keep the thickness to no more than ¼ inch thick. This will ensure you get a nice crispy exterior and a cooked tender, creamy interior. Place the patties in the frying pan and let them cook for 3 to 4 minutes per side or until they turn a crispy golden brown. These can be served as a side dish, with a dollop of sour cream or greek yogurt. TIPS: 1. Make sure to squeeze as much water from the zucchini as you can. 2. Make the patties no thicker than 1/4 inch. 3. You can freeze these after you make them for meal prep. Thanks for watching and sharing! Rockin Robin P.S.
