ZUCCHINI SLICE RECIPE!! • 4- 6 large eggs • 1 cup (150 g) self‑raising flour (or all‑purpose + 2 tsp baking powder) • 2–3 medium zucchini, grated and excess liquid squeezed out (~4 cups) • 1 medium onion, grated or finely diced • 200 g bacon, diced (or ham) • 1½ cups shredded cheddar or tasty cheese • ¼ cup olive oil or vegetable oil • Salt & pepper to taste.1,2 Steps 1.Preheat the oven to 180 °C (or 160 °C fan‑forced) 2.In a bowl, whisk the eggs with the flour until smooth. 3.Stir in the grated zucchini, onion, bacon, cheese and oil; season with salt and pepper. 4.Pour the batter into the prepared pan, spreading it evenly. 5.Bake 30–40 minutes, or until the top is golden and a skewer inserted into the centre comes out clean. 6.Cool 10 minutes, then slice and serve warm or cold.
