Lightly grease a loaf pan and line it with parchment paper. In a large bowl, combine mashed bananas, cottage cheese, maple syrup, eggs, and vanilla extract. Mix until well combined. Add almond flour, baking soda, and cinnamon. Mix until everything is combined and you have a nice, hearty batter. Fold in the chocolate chips. Transfer the batter to the prepared loaf pan. Sprinkle extra chocolate chips over the top if desired. Bake in the oven for 50-55 minutes until lightly browned on top and set through the center. NOTE: Check the banana bread at the 20-25 minute mark. If it is browning too quickly, place a piece of foil over the top of the bread for the rest of the baking time. Makes 10 servings.
