Couscous is so important to the Northeast that it is considered our French bread/salt bread. As easy as it may seem, not everyone knows how to make traditional homemade couscous, so to make life easier for those who love Northeastern recipes, I will show you a step-by-step guide with tips that you can't go wrong with, especially since the Northeastern couscous recipe is simple. Those who think that our couscous only has one way of being made and consumed, which is the traditional and original, are mistaken. Corn couscous is life, it's beautiful and its ways of making it are endless and for all tastes. Try replacing that American processed cereal you buy for the kids with a portion of COUSCOUS WITH MILK😋, you, your children, your health and your culture in valuing the Brazilian dish, in addition to your wallet (obviously), will thank you. In the past, in NORTHEASTERN BRAZIL, CORN COUSCOUS was made in a mortar and pestle and ground in a stone mill, then cooked in a cloth. Today we have FLOCÃO (cornmeal) and a COUSCOUS STEAMER. But if you don't have one, a clean dish towel tied to the lid of the pot will do, creating a steaming effect, and that's all it needs.
