Today Annie will share with you our favorite fried rice recipe, with pineapple, eggs, veggies, and Jasmine rice! This a great meal to put together from your prepping pantry. It has super simple ingredients and is easy to make, but is so delicious! Check out our website with handmade products available for purchase: https://www.heartwayfarms.com/ Here's the recipe: 4 cups cooked rice Avocado oil 1 yellow onion (chopped) 1 can chopped pineapple (20 oz) **save the juice** Frozen peas (or fresh) Frozen carrots (or fresh) (chopped) 6 scrambled eggs Liquid aminos to taste Teriyaki sauce to taste Cook your rice and set it aside to cool completely. In your cast iron, add avocado oil and saute the yellow onion, pineapple, peas and carrots. Add some liquid aminos and teriyaki and let everything reduce and caramelize. In a separate cast iron scramble up and cook your six eggs and set aside. Once your veggies are caramelized add in your rice into your large cast iron and stir frequently. Add pineapple juice as needed to deglaze the pan. Add in liquid aminos and teriyaki sauce to taste. Add in your scrambled eggs and continue to stir. Enjoy!
