Add 10 Byadgi chilies, 2 tbsp coriander seeds, 1 tsp black pepper, 1 tsp fennel, and 1 tsp cumin. Roast till aromatic. If you don’t have Byadgi chilies, use Kashmiri red chilies for vibrant color. Now add ¼ tsp fenugreek seeds and a small piece of tamarind. Roast for 2 more minutes and turn off the flame. Let it cool. Grind the chilies first, then add the rest of the roasted spices and 8 garlic cloves. Grind without water first, then add a little to make a smooth paste. In a plate, mix 1½ tsp salt, ½ tsp turmeric, and 2 tsp Kashmiri chili powder. Slightly crack boiled eggs and rub this dry mix all over. Set aside. In a pan, heat 2 tbsp ghee. Sauté 4 finely chopped onions till golden. Add the ground masala and a few curry leaves. Cook till raw smell fades. Add 3 chopped tomatoes and 1 tsp salt. Cook till soft. Add 1 cup water, cover, and simmer for 10 mins. Add 2 tsp jaggery to balance flavors. Check salt. Now gently add the eggs, spoon masala over them, simmer for 3 mins, and finish with coriander leaves. Egg Ghee roast is ready to be served..
