Hello. I'm Boone Bake. Today, we are going to make a mousse cake that can be made without baking using delicious mango, kiwi and coconut. Mango, kiwi and coconut are ingredients that go well together, aren't they? It felt good to have made a really tasty summer dessert with these three ingredients. It is not easy to make jelly with kiwi. As you know, gelatin is made up of animal protein. Kiwi contains proteolytic enzymes to dissolve the body of insects in order to protect the fruit when outside insects invade. So, it is not easy to make jelly with kiwi. The result will vary depending on how you cut the kiwi, what mold you make, and what size you make. If you cut the kiwi into very small pieces or puree it, the jelly will be more difficult to make. However, the protein enzyme contained in kiwi loses its power when heated above 75C (167F). So, if you use it after heating, you can make jelly. Also, mango and pineapple have proteolytic enzymes like kiwi, so you can use it after heating. Please refer to the detailed process in the video.
