Curried Mince Filling for Vetkoek
CURRIED MINCE Great as a filling for Vetkoeks! INGREDIENTS: 500g lean Beef or Ostrich mince 1 small onion finely chopped 1 Tsp. Veg oil 2 cloves garlic finely chopped 2cm ginger finely chopped or grated 2 tsp. medium or hot curry powder blend 1 tsp. turmeric powder ½ tsp. cumin powder ⅛ tsp. clove powder 1 tsp. paprika 1 green chilli finely chopped 2 Tbsp. tomato puree 1 carrot, peeled & grated ¾ cup peas Salt and pepper to taste METHOD: Heat a frying pan with oil, add onions and saute till translucent, add ginger & garlic and fry for 1 minute. Add spices mix, chilli, carrot and mince. Cook for 5 minutes, then add tomato puree cook for another 5 minutes. Add frozen peas Season with salt & Pepper to taste. Cook until peas are tender. Take off heat and place in a bowl and allow to cool. Finely add some chopped fresh coriander. Place in fridge for 1 hour. This filling can be made hours in advanced but take out of fridge and bring to room temperature when using as a filling for Vetkoeks. “Fork it Studio is not just another creative space, it’s your creative space" “Let the forking begin!!”
