Guiso de costillas en salsa
INGREDIENTS 1.5 kg ribs 2 green peppers 1 red pepper 1 leek 3 medium onions 8 garlic cloves 1 kg potatoes 400 g crushed tomatoes 500 ml chicken broth 500 ml white wine Sweet paprika Olive oil Salt Ground black pepper Ground cayenne pepper 3 bay leaves Honey Whiskey PREPARATION ✅ Start by seasoning the ribs with salt and pepper and searing them with a little olive oil for 10 minutes, then flambé them. Then, transfer them to a pressure cooker for 20 minutes. ✅ While the ribs are cooking, start our sofrito by adding the red and green peppers, onion, leek, and garlic to the same pot where we seared the meat. Once everything is sautéed, add the sweet paprika, crushed tomatoes, beef broth, white wine, bay leaf, and cayenne pepper. Let everything cook for 10 minutes. ✅ After these 20 minutes in the pressure cooker, add the ribs and honey to the pot with the sautéed mixture and cook for 10 minutes. ✅ In a separate pan, fry the diced potatoes. ✅ Now, all that's left is to add the potatoes to the pot with the ribs and let them rest for 3 minutes.
