It is often used to flavour ice creams and cakes. The hokey pokey ice cream recipe is just delicious. The honeycomb is formed when the baking soda reacts with the melted caramel to form a fluffy foamy cloud. It is best to pour this fluffy caramel over a greased surface or tin or over a silicon mat.
