Garlic paste 3 tbsp, 4. Ginger paste 3 tbsp, 5. Jhira powder 1 tbsp, 6. Red chili powder 2 tbsp, 7. Turmeric powder 1.5 tbsp, 8. Dhari powder 2 tbsp, 9. Mustard oil 1 cup, 10. Homemade special spices 3 tsp, 13. Bay leaves 3 14. Cinnamon 1 inch size 8, 15. Small or green cardamom 10, 16. Large or black cardamom 2, 17. Star flower 1, 18. Cloves 8, 19. Black pepper 25, 20. Whole garlic 4, 21. Fenugreek half a teaspoon, 22. Fenugreek or sweet jheera 1 tablespoon 23. Radhuni seed 1/2 teaspoon Preparation method: First, we will wash and clean two kg of guru's meat well and drain the water. Then we will move on to making a special spice. For this, we will take one tablespoon of fenugreek or sweet jheera and half a teaspoon of fenugreek seeds in a blender and blend them. Blend in such a way that it does not become fine at once as if it is half broken. Then we will take the ingredients together. Then, in the pan in which I will cook my meat, I will take the two kilograms of Guru's meat that I have drained and soak it well. Then, I will add two cups of chopped onion, two tablespoons of garlic paste, two tablespoons of ginger paste, one tablespoon of jhira paste, five bay leaves, three one-inch cinnamon sticks, six small or green cardamoms, one star flower, six cloves, one black cardamom or large cardamom, one teaspoon of half black pepper, two tablespoons of red chili powder, one and a half tablespoons of turmeric powder, two tablespoons of coriander powder, salt, one cup of mustard oil and mix well with your hands so that the spices stick to each piece of meat. Then, we will add one and a half cups of water. Add the water in such a way that the water remains on the surface of the meat, but do not add too much. Cover it and put it in the oven and cook it for the first five minutes on full flame. In the meantime, we will go to prepare the main ingredient of this dish. First, we will take 500 grams of whole garlic and peel the garlic cloves in such a way that the garlic cloves do not separate. In this way, we will keep the thin inner peel of all the garlic and peel the remaining outer peels. Then, clean the peeled garlic with water and keep it aside. After five minutes, you will see the meat, stir it and cover it again and cook for twenty minutes. Then you will see that the water has dried up and the oil has floated. At this stage, we will add two cups of water, stir it and cover it with a lid and cook for thirty minutes. In between, we will stir it a few times so that the spices do not stick to the bottom. At this stage, the heat of the stove will be on medium. After thirty minutes, you will see that the meat broth is getting a little thicker and the oil is also floating a little, then we will add one tablespoon of the homemade special spices and half a teaspoon of fried jhira powder. Stir and mix and cover again. After thirty minutes, when the broth dries up and the oil floats and the meat is 70% cooked, we will add the main ingredient of this cooking, garlic, which we have prepared in advance. Stir well with the garlic and mix it well, put the garlic inside the meat and cover again. After this, open the lid again and stir, I will add some potatoes to the meat and mix it well. Cover again and cook for a while. When the broth reduces and the meat, including the garlic and onions, is finished being minced, I will add three cups of hot water to it. Since I will cook the broth today, we will cover it and cook it for twenty minutes on medium heat. Stir and mix it in between so that the spices do not stick to the bottom. In the middle, add the remaining half tablespoon of special masala and half teaspoon of garam masala powder, mix well, add a pinch of salt, add whole red chili, and give it ten. At this stage, add a garlic and see if the garlic is cooked well. Cover the garlic again with a lid and cook on low heat for ten minutes, and you will have a very tasty and delicious traditional Bengali beef curry or Traditional Garlic Beef Curry.
