Fafda with papaya sambharo and kadhi | बेसन से बनाये फाफड़ा , 10 मिनट में सफाचट | Gujarati style | rasoikirani Ingredients : For Fafda dough 1 kg Besan - बेसन Salt to taste - नमक स्वाद अनुसार 1 tbsp papad khar - पापड़ खार 2 tbsp ajwain - अजवाइन 1/2 tbsp asafoetida - हींग Oil - तेल Water - पानी For raw sambhara 2 cup raw papaya - julienned - कच्चा पपीता 1/2 tbsp sugar - चीनी 2 tbsp red chilli powder - लाल मिर्च पाउडर Salt to taste - नमक स्वाद अनुसार 1/2 lemon - juice - नींबू For sambhara - 1 cup Raw papaya - julienned - कच्चा पपीता Oil - तेल 1 tbsp mustard seeds - सरसों के बीज 1/2 tbsp turmeric powder - हल्दी पाउडर 1 tbsp asafoetida - हींग Salt to taste - नमक स्वाद अनुसार For kadhi 2 cup buttermilk - छाछ 2 spoons besan - बेसन 1 tbsp mustard seeds - सरसों के बीज Oil - तेल 1 tbsp cumin seeds - जीरा 1 tbsp asafoetida - हींग 5-6 curry leaves - करी पत्ते 3-4 green chilies - हरी मिर्च 1 tbsp turmeric powder - हल्दी पाउडर Salt to taste - नमक स्वाद अनुसार For fafda Black pepper powder - काली मिर्च पाउडर Method : For dough • First we will take a big bowl, put gram flour and all the spices in it, mix it and add oil to it and mix it well. • After mixing our dough should become like a muthia. Now we will add water to it little by little and prepare the dough. Now we will add oil to it and make it soft. The more we massage it with oil, the softer it will become. • Now we will wrap it in a cloth and keep it aside. For raw sambhara • First we will take a raw papaya, wash it well and grate it. • Now we will take it in a bowl, add salt and spices and mix it. Also we will add lemon juice and mix it. • Now our raw sambhara is ready, now we will take it out in a bowl. For sambhara • First we will take one raw papaya and grate it. • Now take a pan and pour oil in it, then add mustard seeds, then add grated raw papaya and mix it. • Now our sambar is ready so we will take it out in a bowl. For kadhi • First we will take butter milk, add gram flour in it and mix it. • Now we will take a pan and put oil and mustard seeds, cumin seeds and all the other spices in it and fry it. Then add buttermilk to it and keep it to boil for some time. When it becomes thick then off gas flame. • Now our kadhi is ready to serve so we will take it out in bowl. For fafda • So, we will add some oil to the dough we had made earlier, mix it and make it soft. • Now we will take out a piece of dough and make it longer with our hands. Then we will take a board and place this piece on it and by pressing that piece with our palm, we will pull it forward so that it becomes longer. Now to take it out we will take a knife and keeping it on the bottom side we will pull it towards the back side so that it will come out easily and then we will deep fry it in oil. • In this way we will make all the fafda and fry it.
