Making a San Mai (Actually Go Mai) Chef Knife
As a bladesmith, chef knives are one of my specialties. In this video, I make a go mai (5-layer) gyuto chef knife with an ApexUltra carbon steel core and a 420 stainless steel jacket with pure nickel shims in between. The video covers the process from start to finish, from forging the go mai billet to grinding the blade to shaping the handle and sharpening. I made this knife as a commission.
