Spanish garlic chicken | Pollo al ajillo
Spanish garlic chicken or “pollo al ajillo” is a very traditional dish and very versatile. The original recipe is with garlic and fresh parsley, but if you don’t have parsley you can replace it by dried oregano or Italian herbs and a couple of dried cayenne peppers. Also, feel free to increase the amount of garlic if you really like it. Serve this dish with homemade French fries and a green salad, and of course, fresh bread to dip into the garlic oil (yummy). These are the ingredients: chicken: if you have a butcher, ask them to cut a whole small chicken in small pieces or, if you don’t, choose the pieces you like. 4 cloves of garlic whole 4 cloves of garlic smashed in a mortar small glass of white cooking whine fresh parsley olive oil salt and pepper Hope you try this recipe at home and enjoy.
