শালি ধানের নাম শুনেছেন? আউশ, আমন ও বোরো, কোন মৌসুমের ধানের চাল সবচেয়ে ভালো। মাহবুব সিদ্দিকী

আউশ ধানের সময় হলো বৈশাখ থেকে শ্রাবণ মাস। অর্থাৎ মধ্য এপ্রিল থেকে জুলাই মাসের শেষ পর্যযন্ত এর সময়কাল। সাধারণত ৮০ দিন থেকে ১২০ দিনের মধ্যে এ ধান হারভেস্ট হয়। তবে কিছু বিশেষ প্রজাতির আউশ ষাট দিনেও হারভেস্ট হয়। সেগুলোকে স্থানীয় ভাবে বলে ষাইটা অর্থাৎ ৬০ দিনে হারভেস্ট হওয়া ধান। আউশ ধানের চাল খিচুড়ি ও পান্তাভাত খাওয়ার জন্য খুব ভালো। আমন দুই ধরনের। একটি রোপা আমন, অন্যটি বোনা আমন। রোপা আমনের বীজতলা করতে হয়। জুনের শেষে বীজতলা তৈরি করা হয়। জুলাইয়ের শেষে বা আগস্টের শুরুতে এটি মূল জমিতে লাগিয়ে দিতে হয়। বাংলাদেশে মৌসুমি বৃষ্টিকে কেন্দ্র করে শত শত বছর ধরে এটিই ছিল বাংলাদেশের মূল ধান। এরই একটি নাম শালি। ফারসি শব্দ শালি অর্থ উচ্চ শ্রেণির ধান। বাংলাদেশে যত সরু ও উন্নত মানের চাল পাওয়া যায় তার বেশিরভাগই এই শালি ধানের চাল। মূলত দুই ধরনের আমন ধান চাষ করা হয় শ্রাবণ থেকে অঘ্রায়ণ মাসের মধ্যে। নভেম্বরের শেষে এ ধান কাটা হয়। এটিকে বলে হৈমন্তী ধান। অর্থাৎ যেটা কাটা হয় হেমন্তকালে। বোরো ধানের বীজ বপন করা হয় অক্টোবর ও নভেম্বরের মাধ্যে। জানুয়ারি-ফেব্রুয়ারি মাসে চারা রোপণ করা হয় জমিতে। এপ্রিল-জুনে ফসল তোলা হয়। বসন্তকালে এ ধান তোলা হয় বলে একে বলে ’বাষন্তিক’ ধান। Aus Rice: The cultivation period for Aus rice spans from Baisakh to Shrabon months, i.e., from mid-April to the end of July. Typically, it is harvested within 80 to 120 days. However, some special varieties of Aus rice are harvested in as few as sixty days; locally, these are called "Shaitta," meaning rice harvested in 60 days. Aus rice is excellent for making dishes like Kichuri (khichdi) and Panta Bhat (fermented rice). Aman Rice: There are two types of Aman: transplanted Aman (Ropa Aman) and broadcast Aman (Bona Aman). For transplanted Aman, seedbeds need to be prepared. Seedbeds are typically made by the end of June. The seedlings are then transplanted to the main field in late July or early August. For centuries in Bangladesh, this has been the primary rice variety, centered around the monsoon rains. One of its names is Shali—a Persian word meaning high-grade rice. Most of the fine, high-quality rice found in Bangladesh comes from this Shali variety. Essentially, Aman rice is cultivated between Shrabon and Ogrohayon months. It is harvested in late November and is known as Haimanti rice, meaning the rice harvested in the Hemanta (late autumn) season. Boro Rice: Boro rice seeds are sown between October and November. Seedlings are transplanted to the fields in January-February. The crop is harvested from April to June. Since it is harvested in the spring (Boshonto) season, it is also called Bashantic (spring) rice.
