The hustle and bustle outside is so quiet it's hard to believe, and time seems to pass at a leisurely pace. First, the long-awaited tempura-topped soba is brought out. Beautiful soba noodles, freshly chilled in cold water, are beautifully presented alongside crisp, flaky tempura. First, I take a bite of the soba. The rich flavor of the cold soba is irresistible. The uneven noodle strands, unique to handmade noodles, reveal the soba's inherent aroma and sweetness with each bite. The firm texture and smooth texture are fantastic.
