Pour the couscous into the hot water and let it hydrate for 5 to 10 minutes. Set aside. In a frying pan, sauté the onion, garlic, and then the carrot. When it is more golden, add the eggplant and finally the zucchini. Let it cook, but not too much. Loosen the couscous with a fork and add it to the sautéed vegetables. Mix well and add the apricots.
