鮮度抜群のイワナ炭火焼き・骨も頭もまるごと美味!「石川 いいね!File52 いわなの庵」(2023年5月22日放送)

Iwana no Iori, a restaurant frequented by river fish lovers, is located in Sannomiya-cho, Hakusan City, amidst the lush greenery of a clear, flowing valley stream. Thanks to the on-site fish farm, you can always enjoy the freshest river fish. The fish is grilled over a charcoal fire around the hearth for 40 minutes. The head is thoroughly cooked using the fat dripping from the body, and the heat is transmitted through a stainless steel skewer to the core, resulting in plump, delicious meat, head, bones, and organs all savory to eat. The restaurant is run by the elderly Mori couple and Tobishima Hironobu, a frequent customer who later applied to become their apprentice. From April to November, you can enjoy seasonal river fish such as char, yamame trout, rainbow trout, and sweetfish, all raised in the clear waters of the valley stream. In addition to river fish, you can also enjoy the bounty of the mountains in dishes like seasoned rice and small bowls of wild vegetables.
