Bbq Jackfruit sandwiches with slaw

BBQ Jackfruit Sandwich Chef Julia Dunaway If you want to win over your family and friends, the BBQ Jackfruit Sandwich is a great way to start. The BBQ jackfruit is good on everything! It’s perfect in buns with some fresh and bright cabbage, or over baked potatoes or rice, in a burrito or tortillas, or in a regular sandwich. Serve with a side of beans. Use a store-bought low sugar , low sodium, and no fat barbeque sauce or make your own homemade BBQ sauce. My husband loves them! Ingredients 2 cans young green jackfruit, drained, rinsed and drained again (14 ounce cans) 2 cups chopped onion 2 cups grated carrots 2 garlic cloves, minced 1/4 cup water 1/2 teaspoon onion powder 1/2 tablespoon chili powder 1/2 teaspoon smoked paprika 1 teaspoon ground cumin 1/2 tablespoon low sodium soy sauce 1/2 cup purchased or homemade barbeque sauce 1/2 head green or red cabbage 1 tablespoon red wine vinegar or juice of 1 lime 1 teaspoon maple syrup fresh cilantro Jalapeno peppers or Fresno chilies Preheat the oven to 400 degrees. In a large skillet over medium high heat, saute the onion for 2-3 minutes. Add the water and garlic, sauté a couple more minutes and add 2 cups shredded carrots and the jackfruit along with the spices and seasonings. and cook for 15 minutes. Divide the jackfruit on two parchment lined baking sheets, spreading it out. Bake for 15 minutes, stir it around and bake for 10 more minutes. During the last 5 minutes drizzle with 1/2 cup barbeque sauce. Slaw Finely shred (with a mandoline) red or green cabbage and season with a squeeze of lime juice, salt and pepper. Add the maple syrup. Serve sandwiches with bbq jackfruit, cabbage, cilantro, dill or bread and butter pickles, finely sliced jalapeños, red onion and cashew aioli or mustard.
