Ukoy shrimp fritters recipe

Ukoy or okoy is a traditional Filipino shrimp fritters. It is sometimes fried with vegetables but for me, the best way is to have pure baby shrimp. It is crispy and best to dip in vinegar with lots of garlic. I remember my husband Lola (grandmother) used to teach me how to cook Ukoy. Her way is to have it with vegetables such as potato, carrots and sprouts. I was able to buy Ukoy that is thin and so crispy and I had an idea that it is best not to have vegetables because it is crispier.
