Sauté the vegetables until tender but still crunchy. Add salt and pepper to taste. Add the rice: a) Add the washed rice to the skillet with the vegetables and stir well to combine with the other ingredients. b) Add the turmeric powder and mix until the rice takes on a nice yellow color. Cook the rice: a) Pour the water or vegetable broth over the rice and vegetables in the skillet. Bring the mixture to a boil. b) Reduce the heat to medium-low and cover the skillet with a lid. Cook the rice for about 15-20 minutes, or until tender and all the liquid has been absorbed. Add the cilantro or coriander: a) Once the rice is cooked, turn off the heat and add the chopped cilantro or coriander leaves. Mix well to blend the flavors. Serve and enjoy: a) Serve the broccoli rice on individual plates and garnish with a few additional cilantro or coriander leaves if desired. b) You can pair this delicious dish with protein such as chicken, tofu, or fish if you prefer.
