Ingredients (Serves 2) For Batter: ・1 egg ・2 1/2 Tbsp (30 g) sugar ・1 Tbsp honey ・1 tsp mirin ・2/3 cup (70 g) cake flour ・1/2 tsp baking powder ・1 to 2 tsp water For Fillings: ・3.5 oz (100 g) red bean paste (tsubuan) ・Whipped cream, as needed ・Vegetable oil, as needed Instructions: 1. Mix 1.1 oz (30 g) of the red bean paste with an equal amount of whipped cream to create the red bean whipped cream filling. 2. Combine egg, sugar, honey, and mirin in a bowl and whisk together. Sift the cake flour and baking powder into the bowl, then mix until smooth, with no lumps remaining. 3. Cover with plastic wrap and let the batter rest in the refrigerator for 20 to 30 minutes. 4. Heat a griddle to 320°F (160°C). Apply a thin layer of vegetable oil and wipe off the excess with a paper towel. 5. Pour the batter from a high point into a single spot to form a circle about 3 inches (8 cm) in diameter. 6. Flip the pancake quickly once small bubbles appear on the surface. Cook the other side for 20 to 30 seconds, then remove and immediately wrap in plastic wrap to steam. 7. Wait until the pancakes have cooled, then assemble the following two types: 1. Red Bean Paste: Place red bean paste in the center of a pancake and cover with another. 2. Red Bean Whipped Cream: Place the pre-mixed whipped cream in the center, then cover with another pancake.
