Easy yet tasty Potato Rice! The first meal I created in my "New Kitchen" | Traditional Me

I was pleasantly surprised to discover a delightful new variety of apples that Uncle Siriwardena brought us on his way back from Negombo. These small apples were incredibly sweet, tantalising my taste buds. My dear uncle always brings me something new whenever he returns from Negombo, knowing my passion for trying new dishes and tasting exotic fruits. Thanks to his thoughtful nature, we often enjoy a variety of fruits such as different types of grapes, apples, pears, mandarins, oranges, and kiwis—all of which typically grow in cold, snowy countries. My grandmother and I had an early lunch since my brother was out. After lunch, I suddenly had a wonderful idea: I could make a tiffin for our evening tea using the abundant new apples. I quickly prepared a pudding by cooking finely chopped apple pieces in water, mixed with sugar and cinnamon powder. I added the cooked apple pieces to the pudding, which imparted an unusually rich flavour. Some might wonder if the apple pieces needed extra sugar since they were already sweet. Although these apples were quite sweet, they also had a hint of sourness. This sourness caused the hot milk to curdle when added, but with the added sugar, the flavours balanced perfectly and it will never get curdled. While I was making the pudding, I caught a glimpse of our brother, who arrived home at a slow and unenergetic pace. It seemed like he hadn't had lunch, as he usually skips it when he doesn't like the taste of the food that was available in that house or possibly because he might have a stomach issue. My brother tends to be quite reserved; when he feels unwell, he often avoids discussing it with me and our grandmother, not wanting to worry us. This is a common trait among boys. When he mentioned that he didn’t feel like eating, my suspicions were confirmed. Perhaps due to an upset stomach, he made a drink using a few mandarins, but he didn't elaborate on it. The mandarin drink, a perfect blend of honey, pepper, and small pieces of amla, was incredibly refreshing. I can't imagine creating such a perfectly balanced and flavourful drink, except by someone truly skilled in mixing delicious drinks. I made a different rice dish for my brother since he didn't have a homemade lunch either. My grandmother and I had both eaten early, and there was some rice left in the pot. I used ghee, in which I had fried onions and potatoes, to flavour the mixed rice. While my brother and grandmother enjoyed their mixed rice, I took that time to decorate the steamed apple pudding. To create a contrast of flavours, I garnished the pudding with sweet raw apple pieces, while also including steamed apple pieces within the pudding. Adding tiny mint leaf buds not only enhances the exotic beauty of the pudding but also imparts a cool, minty flavour. My brother enjoyed this meal with such enthusiasm, which made me incredibly happy, knowing I could fill his stomach with his favourite food. Dear friends, as you may have noticed, of course! It's a new kitchen. We moved into our grandmother's ancestral home, as it was her birthplace and she cherished living there. Regardless of where I live, I appreciate a conventional lifestyle. I made some changes and refurbished the old kitchen in the ancestral house to match in my style. I firmly believe that our lives should evolve alongside new changes, and these transformations can positively impact us. Embracing new ways of living can be a blessing in disguise.
