How to make KaSoy Noodles Soup (KhaoSoy, KaoSoy, KaSoi)

Ingredients - adjust to your need, and add in the seasonings to the satisfaction of your tastebuds. 4-5 pieces of beef rib bones 1 lb of grounded meat (pork, chicken, turkey) 1 pack of beef meat balls 1/2 lb of shrimp 3 big tomatoes (4 if small) 5 cloves of garlic Half of a red onion 1 pack of Rice noodles Instant beef flavor paste (1/2 cup of beef paste) 1/2 cup Beef broth powder (or 1 packet) 1 tablespoon Ground Ginger 1/2 cup Guilin Style chili sauce 1/3 cup Fermented beans Garlic salt or Salt Fish Sauce Seasoning Soy Sauce (I prefer this over regular soy sauce) -some folks even add in the sweet soy sauce Siracha Chili with fried garlic sauce (hot chili oil) Chili garlic sauce Hoisin sauce Tamarind powder Fried garlic Shredded cabbage Bean sprouts Green onion Cilantro Jalapeño Lime **If you are feeling extra like I do sometimes, I also add in tripe to my broth when adding in the meatballs. And I also love topping it with pork rinds. If you are using fresh noodles, also known as “Fat Noodles” , “chow fun noodles” Instead of boiling the noodles in the boiling pot of hot water, put it in a strainer that will fit into your pot of water and dip the strainer into the hot pot of water for about 30 seconds or so. You can also follow this process for the other types of noodles as well, but it will take longer to soften so leave the strainer in the water until your noodles are soft enough for your liking. You do not have to do each step one at a time. For video recording purpose I did it step by step, but usually I would be doing multiple steps at the same time. If you have some kitchen help to help you prep, that’s even better! You can always boil your broth longer if you prefer. Please let me know if you have any other questions for me.
