Forget the typical bun; today we're giving it a crispy and unique twist with corn tortillas. What makes this burger so special? The key is the combination of lean pork and fresh chistorra sausage. By cooking the chistorra directly on the griddle alongside the meat, we take advantage of all its fat and seasoning to provide an intense flavor without needing any extra spices. We also use Escamorza cheese (smoked) to give it that melted and powerful touch reminiscent of provolone, but with more character. Ingredients you'll need: Ground lean pork (the better if it's from a butcher!). Chistorra sausage (with the casing removed). Day-old bread soaked in lactose-free milk. Egg yolk (to bind the mixture). Corn tortillas (replacing the traditional hamburger bun). Thinly sliced ​​Escamorza cheese. Fresh onion and tomato. Bacon (optional, for the brave).
