Hi!! 👋 Subscribe to my channel 👉🏼 https://goo.gl/4bcxvw and don't forget to activate 👉🏼 «🔔» Ingredients: 30 g Parmigiano Reggiano cheese, chopped (2-3 cm) 30 g extra virgin olive oil 1 clove garlic 400 g zucchini, chopped (about 1 cm) 4 slices of bread, crust removed and chopped 50 g breadcrumbs, plus more to taste 2 sprigs of fresh mint, leaves washed 1 pinch of salt 1 pinch of ground black pepper Preparation Place the Parmigiano Reggiano cheese in the mixing bowl and grate: 10 sec./speed 10. Transfer to a bowl and set aside. Place 20 g of extra virgin olive oil and the garlic in the bowl and cook for 3 min/120°C/speed 1. Add the zucchini and cook for 3 min/120°C/speed 1, then cook for 10 min/100°C/speed 1. Meanwhile, cut 4 squares of parchment paper (10x10 cm) and place them on the work surface. If too much liquid forms during cooking, let it evaporate. Remove the measuring cup and cook for 10 min/100°C/speed 1. Let cool for 15 minutes in the bowl. Add the bread, breadcrumbs, grated Parmigiano Reggiano, mint, salt, and pepper and mix for 30 sec/speed 1. 3. Check the consistency of the dough and, if necessary, add more breadcrumbs. Divide the dough into 4 portions of approximately the same weight. Place a pastry cutter (Ø 8 cm) on one of the prepared squares of parchment paper, place a portion of the dough inside, and smooth with the back of a spoon. Repeat with the other 3 portions of dough. In a nonstick pan, heat the remaining 10 g of extra virgin olive oil. Using the parchment paper, slide the burgers into the pan and cook for 10 minutes per side until golden brown. Serve hot with a seasonal vegetable salad.
