Breaded Tomatoes (Recipe from Claudia Sanders Dinner House) 2 Tablespoons butter 1/2 cup chopped onions 2 Tablespoons all-purpose flour 2 cans (14.5 oz each) diced tomatoes, NOT drained 1/2 cup sugar 1/2 cup oil 1 teaspoon salt 1/4 teaspoon pepper 3 slices bread, toasted & cut into small cubes In a large saucepan over medium heat, sauté onion in butter until tender. Stir in flour until blended and cook two minutes. Add the undrained tomatoes, sugar, oil, salt, and pepper. Bring to a soft boil stirring constantly; cook and stir for two minutes or until slightly thickened. Stir in bread cubes and serve.
