Different authors accept between 8–40 species in the genus. The best-known species is the common rue, Ruta graveolens. The leaves are bipinnate or tripinnate, with a leathery appearance, ranging from green to strongly glaucous blue-green. The flowers are yellow, with 4–5 petals, about 1 cm in diameter, and in cymes. The fruit is 4–5 lobed, a capsule with numerous seeds. It was widely used in European cuisine in ancient times, as well as in many ancient Roman recipes (according to Apicius), but due to its extreme bitterness, it is no longer palatable to contemporary tastes.
