CHOCOLATE BURNT CHEESECAKE | Chocolate Cheesecake Basque Style Recipe

Last time I made my Ube Basque Burnt Cheesecake recipe (link:    • EASY! "BURNT" UBE CHEESECAKE | Ube Cheesec...  ) and it quickly became my favorite because it's easy and it's ube ♥ This time I went for a chocolate version :) It's really more of a dark chocolate cheesecake but you can play around between 45-70% cacao. I went for the 70% because it was my parent's wedding anniversary when I did this and I wanted to give some cake to my dad, who's diabetic. Please enjoy! :) How to Make Chocolate Basque Cheesecake Round Pan: 18 cm (7 inches) Preheated Oven: 220°C (430°F), Convection/Fan Setting or 250°C (480°F) if Convection/Fan Setting isn't available Bake Time: 30 minutes *broil for 2-3 minutes if top still needs to be brown or "burnt" INGREDIENTS: "*"= Notes/Remarks 1 g (1/2 tsp) INSTANT COFFEE, OPTIONAL (get it here: https://shp.ee/z4behmw) 59 ml (1/4 cup) HOT WATER, OPTIONAL *cool down to room temperature before adding to your batter 250 g (9 oz) CHOCOLATE, 60-70% COCOA, MELTED *you can use 45-50%, just take note that it'll be sweeter so you might want to lessen the sugar *cool down before adding to your batter 500 g (1 lb) CREAM CHEESE, SOFTENED 150 g (3/4 cup) SUGAR 2 large EGG YOLKS 3 large EGGS 177 ml (3/4 cup) HEAVY CREAM *you may use All Purpose Cream as substitute 5 ml (1 tsp) VANILLA EXTRACT (get it here: https://shp.ee/wajwk7s) 7 g (1 tbsp) COCOA POWDER 8 g (1 tbsp) CORN STARCH *ingredients SHOULD be in room temperature, unless stated otherwise *tap to release air bubbles in your batter. bake for 30 minutes. you may broil if the top needs to look "burnt" *PLEASE CHECK YOUR OVEN TEMPERATURE BEFORE BAKING! I made the mistake of not looking at my oven temp and put in my cheesecake when it hasn't reached 220°C which is why it cracked :(( It doesn't affect the taste and the crack wasn't that noticeable when the cheesecake deflated and cooled down.
