PORK CURRY / ANGLO-INDIAN PORK CURRY / SIMPLE PORK CURRY / PORK CURRY WITHOUT OIL
PORK CURRY Ingredients 1 kg Pork cut into medium pieces with fat and lard 2 tomatoes chopped 2 large onions chopped finely 3 green chilies sliced lengthwise 2 teaspoons ginger garlic paste 2 teaspoons chillie Powder ½ teaspoons turmeric Powder 2 teaspoons coriander powder 1 teaspoon cumin powder Salt to taste 2 potatoes boiled and peeled Wash the pork and marinate it together with the chillie powder, turmeric, coriander powder, cumin powder, ginger garlic paste and salt for half an hour. Transfer the marinated pork to a suitable pan and start cooking on medium heat, without adding any oil, till the pork pieces start getting firm and leaves out water. Now add the green chilies, sliced onions and tomatoes and mix well. Keep cooking on low heat till the tomatoes and onions melt . Add in some chopped coriander leaves Add sufficient water to just cover the pork. Cover and simmer on low heat till the Pork is almost cooked and the gravy thickens Add the boiled potatoes. Mix well . Cover and cook till the gravy is thick Garnish with chopped coriander leaves You will observe that the pork leaves out quite a lot of oil. Serve with bread or rice. If cooking in a pressure cooker, turn off heat after 5 whistles.
