Stir-Fried Water Spinach with Belacan Recipe by Rudy Choirudin INGREDIENT 1: Remove the leaves from 250 g water spinach, split the stems, and cut them into 5 cm pieces. Wash and let them soak. 2 red chilies, deseeded, cut in half and cut diagonally. INGREDIENT 2: 6 tbsp oil 4 cloves crushed garlic 1 tbsp soy sauce 2 tbsp sweet soy sauce 1 1/2 tsp fried belacan powder 1 tsp sugar ½ tsp salt ½ tsp mushroom stock 3 tbsp water HOW TO MAKE: 1. Heat oil, sauté garlic until golden brown. 2. Add soy sauce, sweet soy sauce, shrimp paste, and red chilies, then stir well. 3. Combine sugar, salt, mushroom stock, and water, then stir briefly. 4. Add water spinach, stir for 60 seconds, turn off the heat, and continue stirring until the water spinach is combined with the spices. 5. Remove from heat, place on a serving plate, and garnish. 6.
