The company “Amarillo Corn” is harvesting the first ears of corn for fresh consumption this season on a farm located in Trajano, a hamlet near Utrera (Seville). The sweet corn harvest has started early due to the high spring temperatures. They harvest twice a year, in spring and autumn. The spring harvest is the most productive. Around thirty farmers in Trajano grow sweet corn for “Amarillo Corn.” This harvest is very good, but the destination markets are slow. Ninety percent of the sweet corn produced by this company is exported, mainly to Great Britain. The ears are prepared according to the tastes of the destination country. They are sold in bulk, and customers package them. Harvesting is done by hand by workers, and as the plants grow, harvesting machines come into play. Once in the warehouse, the ears go through a water cooling system to slow down the ripening process. Amarillo Corn is the leading producer of fresh corn in Spain and one of the top producers in Europe. Ten percent of the harvest that remains in Spain is sold to supermarket chains.
