GTS Episode 06: Jalapeño Popper Juicy Lucy

This week I’m taking a stab at making the famed mid-west Juicy Lucy burger. Instead of just a burger filled with cheese, we are stepping it up a notch using bacon and jalapeño to make it like a jalapeño popper! Some beautiful produce and ground wagyu take it to a whole new level. Turned out to be the best burger I’ve ever made, and I highly suggest trying it yourself. It’s so easy and quick, so go for it. Feel free to comment with any food fusions you would like to see in the future. A friend of mine wanted to see Juicy Lucy, so you know I listen to suggestions! Recipe: Jalapeño Popper Juicy Lucy Patty (per burger): 6-8 oz ground Wagyu (or Chuck) 1 slice American Cheese 2 slices of Bacon 5 pickled jalapeños Salt and Pepper 1. Rough dice the bacon, and cook until mostly browned and foaming. The bacon should be slightly crunchy but still flexible. Set aside the bacon to cool for ~5 minutes. 2. Using a lightly oiled ring mould or shallow bowl, push enough ground beef to cover the bottom about 1/4 inch thick. Push the meat slightly up the sides of the container to create a 1-2mm lip around the patty. 3. Fold one slice of American cheese in half twice and place in the middle of the patty. Sprinkle bacon and pickled jalapeño over the cheese as desired. 4. Place another thin Layer of beef over the fillings and push down the edges to keep all the fillings inside. Make sure the patty is completely enclosing the fillings, you can patch with additional beef if needed. 5. Cook in a high heat pan (preferably cast iron) with a small amount of the oil of your choice. Cook 3 minutes per side for a nice medium finish. 6. Serve on a toasted bun smeared on both sides with the sauce recipe below. Add your veggies of choice (I went with green leaf lettuce, red onion and heirloom red tomato.) Not-so-secret Amazing Burger Sauce: 1 tbs. Mayonnaise 1 tbs. Ketchup 2 tbs. Mustard Worchestershire Sauce 1/2 Fresh Jalapeño 1. Remove seeds from half a jalapeño and finely dice it 2.
