What does exist is my tortilla: with perfectly caramelized onions, juicy inside, with Aunt Remedios's secret that I've never shared on camera, and with that twist that's failed me more than once in my life. In this video, I'll tell you how I make it, step by step, from the potatoes to the resting time, with all my quirks and all my decisions. If your tortillas turn out dry, hard, or break when you twist them, stick with me: I'll explain how to properly confit the potatoes so they're soft and creamy, when and how to add the onions, the exact moment to twist them without fear, and how to achieve that creamy texture inside that's not raw but also not rock hard. 📝 Suggested Ingredients (Serves 4–5): Eggs — 5–6 medium or large, fresh Potatoes — 3 medium (not new potatoes) Onion — 1 medium, sweet Extra virgin olive oil — plenty, for confiting Salt — to taste Brief Preparation: Peel and slice the potatoes thinly and irregularly. Confit them over medium heat in plenty of olive oil for about 15–20 minutes, until soft and easily yielded. Halfway through cooking, add the finely chopped onion and let it cook with the potatoes until translucent and sweet. Drain well and let cool slightly. Beat the eggs in a separate bowl, add salt, mix with the potatoes and onion, and let the mixture rest for at least 5 minutes. Cook in a hot non-stick pan with a little of the confiting oil over medium-low heat for about 4–5 minutes per side. Flip it decisively and confidently. Let it rest for 5 minutes before cutting.
