Prepare the potatoes Wash and peel the potatoes well. Using a peeler or mandoline slicer, cut the potatoes into very thin and even slices. The thinner and more even the slices are, the crispier and more evenly cooked your chips will be. 2. Remove excess starch Place the potato slices in cold water. If possible, change the water once or twice to remove more starch. Then drain them well. 3. The secret to extra crispy chips Place the potato slices in boiling water for only 1–2 minutes, then immediately transfer them into ice water. This step helps create lighter, crispier chips with a more golden color while reducing oil absorption. 4. Dry completely Spread the slices over a clean towel or paper towel and dry them thoroughly. Even a small amount of moisture can cause oil splattering and make the chips less crispy. 5. Fry the chips Pour oil into a pan and heat over medium heat. The oil temperature should be around 170–180°C (338–356°F). Add the potato slices gradually and avoid overcrowding the pan, so the oil temperature stays consistent. Fry until the chips become golden, light, and crispy. Transfer them to a wire rack or paper towel to remove excess oil. 6. Season the chips Mix garlic powder, paprika, and salt together.
