Osazones are the condensation products of an aldose with phenylhydrazine. In the first step, a phenylhydrazone is produced by reacting the sugar with the first equivalent of phenylhydrazine. The second equivalent of phenylhydrazine produces the oxidation of the 2-hydroxyl to a ketone, which forms a new hydrazone with the third equivalent of phenylhydrazine.
