Hummus is traditionally made with chickpeas and tahini, a special sesame paste, also known as sesame butter, widely used in Turkey and the Middle East. The distinctive flavor of chickpea hummus is its delicate flavor, thanks to the chickpeas, but also a bit tart, thanks to the addition of lemon juice, which provides the perfect balance of flavors. Tahini is a sesame paste with a buttery consistency, added to hummus to make it even creamier and smoother. This ingredient characterizes hummus and distinguishes it from a regular chickpea spread, but it is often difficult to find. If you can't find tahini, you can omit it or replace it with sesame seeds and oil, as we did in this recipe to make a simple chickpea spread, equally flavorful. Store hummus in an airtight container in the refrigerator for 2-3 days. To spice up your hummus, you can add a teaspoon of curry to the mixture. To save time, you can replace the dried chickpeas with pre-cooked canned ones.
