I didn't go to Makola Market with a recipe. I went with questions. The women who sell in Makola have been doing this for generations. They know which tomatoes are right for jollof, which peppers carry the heat, which spices you don't skip. And if you approach them with genuine curiosity rather than a camera and a checklist, they will teach you everything. This is a walk through one of West Africa's most iconic markets — shopping for everything needed to make chicken and jollof rice from scratch, bartering in the heat, learning from women who have fed Accra their entire lives. It is loud, vibrant, generous, and one of the most fully alive experiences I have had on the continent. There is a reason jollof rice is at the centre of West African culture. It is not just food. It is a statement of identity, of home, of everything Africa has always been and continues to be. As a Black American cooking it for the first time with ingredients from Makola Market — that means something I don't have words for yet.
