Boil the water, add the sugar and ginger, and boil for 5 minutes. Turn off the heat and let it cool. 3. Pour the mixture into a jar, add the lemon juice and lemon zest, and then close the jar. Let it sit at room temperature for 1 day. 4. After a day, strain, removing the lemon zest, and bottle the lemonade. Seal it tightly. Store the jar in a place protected from excessive heat and light until it ferments. This way, it may take a few more days to ferment, but it will ferment spontaneously. 5. When the bottle is fully inflated, refrigerate it, and it's ready to serve!
