When people roast brussels sprouts (or any vegetable, really) they tend to use low heat, not enough time, and the wrong vessel. Roasted brussels sprouts should heat up and smoke out your kitchen like a 2-inch thick ribeye. Preheat your sheet pan, crank up the fire, and let them roast until you think they're almost burnt. (A note on sheet pans: Old, stained, dark ones will do a better job browning food than a brand new shiny one.
