Fermentation: • Soak the corn kernels in water for 2-3 days to ferment. Be sure to change the water daily to prevent spoilage. 2. Grinding: • After fermentation, rinse the corn and grind it into a smooth paste. This can be done at home with a powerful blender or at a local mill. 3. Sieving: • Add water to the ground paste and sieve it using a muslin cloth or fine sieve to separate the chaff from the starch. 4. Settling: • Allow the sieved mixture to settle for a few hours. The starch (pap) will settle at the bottom, and you can pour off the excess water. 5. Storage: • Transfer the settled pap into a clean container and refrigerate it. This pap can be cooked into a smooth porridge whenever needed. For weight gain, you can enrich the pap by adding milk, sugar, or honey after cooking. For extra protein and calories, mix it with groundnuts, soybeans, or crayfish powder.
