Instant Jackfruit Patholi with Rava is a quick and delicious variation of the traditional Mangalorean Patholi. Instead of soaking and grinding rice, this recipe uses roasted rava (semolina), making it easy to prepare while retaining the authentic taste. Ripe jackfruit, jaggery, coconut, and cardamom are mixed with rava, wrapped in fragrant teak leaves, and steamed to perfection. The result is a soft, aromatic, and naturally sweet delicacy that's perfect for breakfast, tea-time, or festive occasions. Ingredients: 1 cup ripe jackfruit bulbs (seeds removed) 2 cups fine roasted rava (semolina) 1/4 cup grated jaggery (adjust to taste) ½ cup grated fresh coconut ¼ tsp cardamom powder 1/2 tsp pepper corns A pinch of salt 1 to 1¼ cups water (as required) 5 teak leaves (or banana leaves if unavailable) Method: Prepare the jackfruit: Blend the ripe jackfruit, coconut gratings, jaggery, cardamom, pepper corns into a smooth or slightly coarse puree. Prepare the mixture: In a bowl, combine the jackfruit puree, roasted rava, Gradually add water and mix well to form a thick batter. Rest the batter: Let the mixture rest for 10–15 minutes so the rava absorbs the moisture. If the batter becomes too thick, add a little more water. Prepare the leaves: Wash the teak leaves and wipe them dry. Lightly pass them over a flame to make them flexible. Fill and fold: Take 2–3 tablespoons of the batter on each teak leaf. Fold the leaf over. Steam: Arrange the folded patholis in a steamer and steam for 20–25 minutes until the mixture is firm and cooked. Serve: Allow them to cool slightly before opening the leaves. Enjoy warm. Serving Suggestion: Serve warm with a drizzle of ghee for an authentic Mangalorean treat. It also pairs wonderfully with a cup of hot tea or coffee. Tip: Using fresh teak leaves gives the Patholi its signature aroma and colour. Choose fully ripe, sweet jackfruit for the best flavor and naturally sweet taste. 😊🌿🥭
