I'll take you to appreciate the Villimpenta tradition, straddling the provinces of Verona and Mantua. Villimpenta is a small town in the Mantua region on the border with Verona. Alessio Zanolo, a restaurateur with a passion for his region's gastronomic traditions, lives and works there. So passionate is his passion that everything in his kitchen is made strictly by hand, respecting the dictates of the teachings inherited from his elders. And risotto is the most powerful symbol of this culture, cooked with the classic lid and long resting technique. But it's the "pistume" that makes the difference, the seasoning. Alessio grinds the meat in the kitchen. He grinds it coarsely, because the flavor must always be intense, adding salt and pepper ground with the family grinder. But then there's also the other typical risotto of the area, with "saltarei" or "pessin," fried and generously sprinkled over the risotto. And then there are the pumpkin ravioli and the meat ones.
