It's said there are more than 2,000 varieties of cheese in the world. Each one has a characteristic that makes it unique, and its consistency and flavor are what make it our favorite. These techniques and varieties have given rise to the different cheeses found in the various regions of the country. One of the favorite cheeses in Mexico is the so-called Chihuahua style. This is the cheese we originally saw Mennonite men selling on the streets, dressed in their typical overalls, plaid shirts, and hats.
